"Com Tam" is a southern dish that can be found all throughout Saigon. In Vietnamese, "Com Tam
literally translates to "broken rice," or "cooked rice made from broken rice grains." Rice that has been broken is frequently presented on a plate or in a box (if purchased). The manner of eating is similar to that of other types of rice sold on other plates, except that southerners frequently use a spoon and fork, whereas the Central and Northern regions are not accustomed to using a fork, and rice shops in the Central and Northern regions frequently have extra chopsticks for ease of use. The Asian Record Organization has recognized Saigon broken rice and nine other Vietnamese dishes as the Asian record for gastronomic value. Actually, broken rice is incredibly tasty and well-known.
